Using Metric Measures
This book gives quantities in both American cup and metric measures. Metric equivalents of American cup measures are shown in parenthesis, like this: 1 cup (175 g) rice. Never change between American cup and metric measures in the same recipe; they are not interchangeable. Exact conversion from American to metric measures does not usually give convenient working quantities, so the metric measures have been rounded off to units of 25 grams. For example, 1/2 cup of flour, which equals 57 g, is rounded off to 50 g; 1 cup of flour (113 g) is rounded off to 100 g.
The same principle applies to the milliliter measurements. For example, 1/2 cup, which equals 118 ml, is rounded off to 125 ml; 1 cup, which equals 236.6 ml, is rounded off to 250 ml.
Notes for British Users
Although many American and British units of measure have the same names, not all are identical. In general, the weights are identical but the volumes are not.
The British fl oz is 1.04 times the American fl oz. So the standard Imperial 1/2-pint measuring cup holds 10 fl oz (10.4 American oz), whereas the standard American 1/2-pint measuring cup holds 8 American fl oz. To obtain accurate
• British pint measures, convert American cups into American fl oz using the table given on page 299. Then convert American fl oz into British pints.
• The American standard tablespoon holds 14.2 ml, and the British standard tablespoon holds 17.7 ml. In England use 3/4 tablespoon for every American tablespoon. A teaspoon holds approximately 5 ml in both countries.
Notes for Australian Users
In Australia, metric measures are now used with the standard 250 milli-litre measuring cup. The teaspoon is the same in Australia,. New Zealand, Britain, and the United States. The Australian standard tablespoon, however, holds 20 ml, or 4 teaspoons the British tablespoon holds 3 1/2 teaspoons, and the American, Canadian, and New Zealand tablespoon holds only 3.
